mini chicken pot pies

I wasn't going to post this but everyone over here thought they were just the bees knees.

super easy

for the filling;

about 4 chicken breasts (I used left over chicken I baked from the night before)
1 can cream of mushroom soup
1 can mixed veggies

for the crust;

2 cups flour
1 teaspoon salt
2/3 cups shortening plus 2 table spoons
and 6 tablespoons cold water


So for my left over chicken I just boiled it for about 10 mins then shredded it then mixed in the cream of mushroom and mixed veggies. done for that part.

For the crust mix the flour salt and shortening first it will look lumpy then start adding water at this point I starting using my hands to mix it all together until I got a ball of dough.
Then I rolled the dough out and used coffee cup lid to cut out little circles then rolled them out more and placed in muffin tin.

After you have 12 little muffin pie crusts ready fill them all with your chicken veggie mixture and bake at 400 for about 30 minutes.

tip; if you want them all to have little muffing tops you're gonna need to double the crust recipe

seriously simple shepherd's pie

It's starting to get chilly and I'm all about comfort food!
And this is my all time favorite, so simple and cheap and delicious!

All you will need;

1 lb browned ground beef
1 can corn
1 small can peas
1 can green beans
1 can cream of mushroom soup
shredded cheese
mashed potatoes

tip; you could also use 2 cans mixed veggies instead

After you've browned your beef just mix the corn, peas, green beans, and cream of mushroom soup
together in whatever you choose to bake it in I choose an 8x8 pan

Then add a layer of cheese a top it

then top with mashed potatoes

Bake at 325 for 25 mins!

Stuffed Jalapeno Cheesy Chicken

If you know me, by now you know we always have Jalapenos in our fridge. Today I also realized I had cream cheese and nothing goes better together! Let's get started!

(for 2 servings)

You will need;

3 chicken breast
1 egg
1 cup crushed cereal
1 large jalapeno
small amount of cream cheese
3 slices Colby Jack cheese

Instructions;

Slice jalapenos 
Take your chicken breast place 3 or 4 jalapeno slices inside
Slice off your desired amount of cream cheese and add on top of jalapenos
Add your Colby Jack cheese on top and kind of fold/roll up like a taco
Mix your egg up I added a dash of milk and salt and pepper
Dip chicken in egg and then in crushed cereal

Bake at 400 for about 30 minutes give or take

easy baked Whiting

what you'll need;

3 whiting fillets 
salt 
pepper
garlic salt 
smoked paprika
crushed corn cereal
vegetable oil

Thaw your fillets
Spread vegetable oil evenly on bottom of baking dish so they won't stick
Once thawed add salt and pepper I just added a pinch of salt on each, and also sprinkle on garlic salt, flip and do other side of fillets
Once your cereal is crushed add about three shakes of smoked paprika into the cereal & mix in 
Now cover fillets in the crushed cereal (I added jalapenos on top for the looks and spice)
Bake on 425 for about 20 to 25 minutes

Peanut Butter-Pumpkin oatmeal bars

These are so delicious and really simple and quick!

What you'll need;

1. 18oz jar of peanut butter (creamy or crunchy)
2. 21oz can pumpkin pie mix
3. 1 cup sugar
4. 2 cups packed brown sugar
5. 4 cups rolled oats
6. 2tsp cinnimon
7. 2tbsp vanilla extract

Mix all ingredients together (will be very moist)
Press into pan and bake on 350 for about 25 minutes! I like mine softer so I took them out just a little early. Enjoy!!

(Keep leftovers in fridge)

energizing smoothie (for entire week!)

So in the picture you'll see two small cupcake looking things that's all your fruits and veggies!

The veggie one is made of;
1. 3 Beets
2. Handful of spinach
3. Splash of coconut water

Now you've made enough to last a week and a half, pour into cupcake liners and freeze.

The fruit one is made of;

1. A carton of strawberries
2. Half of a 6oz package of blackberries
3. 2 whole peaches
4. 2 nectarines

Blend with a small amount of yogurt and pour into cupcake liners and freeze!

Now throw the veggie one and the fruit one in the blender add couple tble spoons of yogurt (I use kefir) and a couple of OJ and your set!!

I know it seems like a process but it only takes like 10 minutes and you've made your entire week and a half easier!

Simple S'more cupcakes!

So you want the s'more cupcakes you saw on Pinterest but there home made and you have a two year old and don't have all day to bake! Solution; easy crust, box mix and marshmallow frosting!!

For the crust;

1 1/2 cups crushed graham crackers
6 table sppons sugar
6 table spoons melted butter

Mix them all in a bowl and press into cup cake liners bake 325 for 7 minutes.

Then make the cake mix you choose (I got triple chocolate fudge)
Fill liners a little more than half way
And bake for whatever the box says!

Let cool for 5 minutes
Then take out of pan let cool some more

Then frost with your marshmallow frosting and TaDa!! Your done!

I added Hershey's chocolate syrup on top for good looks ;)

(I had mix left over so made more crust and and more cup cakes!)
